Greek Spinach Pie

A great way to eat your spinach!

Ingredients

1 pkg Pie crust mix or frozen pie crust

1 1/2 lbs Fresh spinach or 2-10 oz pkg frozen chopped spinach

2 tbsp Margarine or butter

1/2 cup Chopped onion

1 clove Garlic, chopped

3 tbsp Margarine or butter

3 tbsp Flour

1 1/2 cups Milk

1 1/2 tsp Salt

1/4 tsp Pepper

Dash nutmeg

6 Eggs

8 oz Shreeded mozarella cheese

Suggested garnishes: chopped ham, tuna chunks, tomato slices

Preparation

Prepare pie crust according to package directions. Place in ungreased 10-inch glass pie plate. Cook spinach, press out all moisture. Chop finely. In skillet heat 2 Tbsp butter or margarine and saute onion and garlic until golden. Stir in spinach. In saucepan, melt 3 Tbsp butter or margarine, stir in flour, gradually stir in milk. Stir over low heat until sauce bubbles and thickens. Stir in salt, pepper, nutmeg and spinach mixture. Beat eggs until well blended. Stir eggs and cheese into spinach mixture -- stir until well blended. Pour into pie shell. Bake in preheated oven (350 degrees) for 40-45 minutes or until puffed and firm to the touch in the center. Top each piece of pie with desired garnish. Serve hot.
