Fettucine with Snow Peas, Ham & Tomato

Ingredients

1 tsp Butter

2 Shallots, finely chopped

1 clove Garlic, minced

1 cup Dry white wine

2 cups Whipping cream

1 tsp Dried, crumbled tarragon

1 1/2 cups Snow peas, trimmed, halved diagonally

1 cup Slivered ham

1 Large tomato, peeled, seeded & diced

1/2 cup Freshly grated parmesan cheese

Salt & fresh ground pepper

1/2 lb Freshly cooked spinach fettucine

1/2 lb Freshly cooked white fettucine

Additional parmesan cheese

Preparation

Melt butter in large skillet over med-high heat. Add shallots & garlic, saute until soft, but not browned (2-3 min). Add wine and simmer until reduced to about 2 tsp (~ 5 min). Add cream and tarragon and simmer, stirring occasionally, until reduced to 1 1/2 cups (~ 10 min). Stir in snow peas, ham & tomato and cook until heated thru (3-4 min). Mix in 1/2 cup parmesan cheese, salt & pepper. Combine both fettucines in large serving bowl. Pour sauce over and toss. Sprinkle with additional parmesan cheese.

Cook's Notes

Just add a tossed green salad and some garlic bread and you're set.
