2 tbsp (1/4 stick) unsalted butter
1 Small clove garlic, peeled and diced
3 Medium zucchini, unpeeled, grated
Freshly grated nutmeg
Salt and pepper to taste
1. In a large skillet, melt the butter and saute the garlic over medium heat for 3 to 4 minutes. Do not brown.
2. Toss the zucchini in the hot garlic butter until tender, 2 to 3 minutes. Season with nutmeg and salt and pepper, serve immediately.
Done in no time at all.
