Simple Baked Chimichangas

Really quick, crisp chimichangas

Ingredients

8 Six-inch flour tortillas
1 lb Cooked and cubed chicken or prepackaged precooked chicken pieces, OR ground meat, poultry or beef.
4-6 oz. Shredded cheese
1 cup Salsa

Preparation

1. Preheat oven to 400 degrees.

2. Apply cooking spray to baking sheet or dish.

2. Mix all ingredients except tortillas.

3. Warm tortillas in microwave oven inside damp paper towels.

4. Assemble each chimichanga:

(a) Wet one side of tortilla and place it wet side down.

(b) Spoon about a 1/4 cup of filling in center.

(c) Fold over two sides to make tube, then fold over the other two sides to complete the package.

(d) Place seam side down on prepared baking sheet.

5. Bake for 15 minutes.

Cook's Notes

(1) Any size tortilla works, just adjust the filling amount. (2) Add sour cream, guacamole and more salsa to complete dish. (3) These are excellent frozen too, just go directly from freezer to oven, though add another 5 minutes at 350.
