Banana-Cinnamon French Toast

Hungry for breakfast but have little in the kitchen besides a couple of eggs, some milk, an overly ripe banana and a few slices of bread? This recipe is perfect.

Ingredients

1 Large very ripe banana
2 Eggs
1/2 cup Milk
1/2 teaspoon Ground cinnamon
4 slices Whole wheat bread
3 tbsp Butter

Preparation

Blend first 4 ingredients in processor until smooth. Transfer to 13x9-inch pan. Place bread in milk mixture and soak until all liquid is absorbed, turning bread occasionally, about 20 minutes.


Melt butter in heavy large skillet over medium heat. Add bread and cook until golden brown, about 3 minutes per side. Serve immediately.

Cook's Notes

Use maple, jam, or powdered sugar as a topping if you wish.

I just made these and they are awesome. I've made different types of french toast before, but never really found anything that I thought tasted good with wheat bread. I even used two end pieces and two regular slices because that was all I had and my banana wasn't overly ripe and the recipe still turned out awesome. Definately a keeper
