Red and Green Salad with Cranberry Dressing

A Low-fat, refreshing salad that is perfect for the holidays.

Ingredients

1/4 cup Fresh cilantro, rinsed

1 Shallot (1 oz), peeled and chopped

1/3 cup Seasoned rice vinegar

1/3 cup Cranberry juice blend

1 tablespoon Honey

1 teaspoon Dijon mustard

1/4 cup Dried cranberries

10 cups Mixed baby salad greens, rinsed and crisped

2 cups Shredded red cabbage or radicchio

1/3 cup Thinly sliced red onion

1 Red bell pepper (7-8 oz) rinsed, stemmed, seeded, and thinly sliced

Salt

Preparation

In a food processor or blender, puree cilantro, shallot, vinegar, juice, honey, and mustard. Add dried cranberries.

In a large bowl, mix salad greens, cabbage, onion, bell pepper, and the dressing. Add salt to taste.
