Ingredients
2 tsp Olive oil
1 c Finely chopped zucchini
1/2 c Rinsed and drained black beans
1 tsp Cumin
1/4 c Cheddar cheese
2 Whole wheat tortillas
Preparation
In a pan, saute oil, zucchini, black beans and cumin for 5 minutes. Divide zucchini mixture and cheddar cheese between 2 tortillas. Fold in half and put into pan until cheese melts and tortillas are toasted--about 3 minutes per side. Top with 2 Tbs salsa if desired.
