Ingredients
3/4 cup Oat bran
3/4 cup Whole wheat pastry flour
1/4 cup White flour
1 tsp. Baking soda
1/2 tsp. Baking powder
1 tsp. Nutmeg
1/4 tsp. Salt
2 Egg whites
1/2 cup Sugar
2 Bananas, mashed
1/4 cup Canola oil
1 tsp. Vanilla
2 tb. Fresh lemon juice
Grated rind of one lemon
Preparation
Mix dry ingredients together; mix wet ingredients together; then mix dry into wet just until blended. Spoon into greased muffin tin. Bake at 350 for 35 minutes. Makes a dozen muffins.
Cook's Notes
It's easier to grate the lemon rind before you cut and juice it.
