Alaskan Grilled Salmon

This is a quick and easy Salmon recipe that really impresses company.

Ingredients

2 lbs Salmon Fillet, skin on
1/2 Cp Mayonaise
2 Lemons
2t Hot sauce
2t Minced Garlic
3t Fresh Dill, chopped
Salt and pepper to taaste

Preparation

Slice 1/2 of 1 lemon into rounds. Take a piece of heavy duty tin foil the length of the fillet plus 8 inch. Spray with non stick spray. Lay the salmon Fillet skin side down on the foil . Season fillet with salt, pepper, 1 T dill, and 1 T minced garlic. Squeeze half a lemon on fish.

Pull the two long sides of the foil together over the salmon roll the foil down to about a 1/2 in from fish. Roll each end in until it is a 1/2 inch from the fish. I should now be a sealed pouch. Grill on a medium temperature grill for 15 min.

Meanwhile mix remaining ingredients including juice of whole lemon in a food processor bowl.

Carfully open foil and check fish. When almost done (about 5 min. left) top fish with cream suce and lemon slices grill open for another 5 min. Remove from grill.

Cook's Notes

I usually serve this salmon with wild rice, broccoli and carrots. I often make it in the oven the same way just preheat oven to 350.
