Ingredients

1/4 cup Chopped white or yellow onion
1 Chopped apple
2 ounce Potato
2 tablespoons Shredded reduced fat cheddar cheese
2 tablespoons Fat free sour cream
2 beaten Egg whites
1 cup Fat free milk

Preparation

Lightly coat a skillet with olive oil cooking spray. Heat over low to medium heat. Add 1/4 cup chopped white or yellow onion, 1 chopped apple (with skin), and a 2 ounce potato with skin, grated. Cook for 10 minutes, stirring frequently, until the potatoes turn golden brown. Add 2 tablespoons each shredded reduced fat cheddar cheese and fat free sour cream, and 2 lightly beaten egg whites. Pour off excess water as the egg and potato cook. Cover the skillet and continue to cook for 4 to 6 minutes, until the eggs are set. Serve with 1 cup fat free milk
