2 1/4 cups FLOUR
1 t. BAKING POWDER
1/2 t. SALT
1-1 1/2 t. CINNAMON
1/2 cup SUGAR
1 EGG, beaten
2/3 cup MILK
1/2 cup VEGETABLE OIL
1 1/2 cup SHREDDED APPLE
Preparation
Combine FLOUR, BAKING POWDER, SALT, CINAMMON, and SUGAR in bowl; make a well in center of mixture. Combine EGG, MILK, and OIL; add to dry ingredients, stirring just until moistened. Stir in APPLES. Spoon into greased muffin pans, filling 3/4 full. Bake at 400 F for 23-25 minutes.
