4 Salmon fillets
1/2 cup Lemon juice
1/8 cup Soy sauce
3 tbsp Panko bread crumbs
2 tbsp Finely chopped fresh parsley
1 tbsp Finely chopped almonds
1 tsp Dried Italian seasoning
1 Dash salt
1/8 tsp Pepper
1 Egg white
Preparation
Marinade fish fillets in the mixture of soy sauce and lemon juice for 30 minutes.
Preheat oven to 425F and spray a sheet pan with nonstick cooking spray.
Mix together the bread crumbs, almonds, parsley, italian seasoning, salt and pepper.
Dredge fillets in egg white, then crust in dry mixture.
Arrange on baking tray and bake for 10-20 minutes, or until fillets flake easily with a fork.
