Baby spinach salad with stawberry vinaigrette

Ingredients

DRESSING
1/4 cup Olive oil
1/4 cup Oil (flax, hemp, grape, etc)
1/3 cup Rice vinegar or apple cider vinegar
4-6 Strawberries, tops removed
1 tsp Dijon mustard
1/8 tsp Salt
1/4 tsp Black pepper



SALAD
1/4 cup Pine nuts (toasted-- in the oven @ 350 for 10-15 min & let cool or in the pan @ med heat for 3-4 min stiring & shaking frequently until they begin to brown)
8 cups Baby spinach leaves, tightly packed
6-8 Strawberries, tops removed & thinly sliced
1 cup Grape or cherry tomatoes

Preparation

To prepared dressing, in a blender or food processor, combine all the ingredients until smooth & creamy. To prepare salad: separate spinach into bowls. Garnish with tomatoes, strawberries & pine nuts. Drizzle with vinaigrette just before serving.
