Ingredients

2lbs Southern style hashbrowns, frozen
6 oz Pepper jack cheese
3 Small onion, diced
1 can Black beans, drained & rinsed
8 Eggs, well beaten
1 c Shredded cheese

Preparation

Preheat oven to 400.

Grease a 9x13 baking dish and spread hashbrowns evenly.Bake hashbrowns about 20 minutes.

Remove from oven, spread onion, cheese, and beans over potatoes. Pour eggs evenly over top.

Sprinkle with shredded cheese.

Bake for another 40 minutes.
