Ingredients

1 pound Ground turkey
1/2 cup Chopped onion
1 clove Garlic chopped
1/4 Minced green bell pepper
1 Chopped medium tomato
1/4 tsp Dried basil, crushed
4 Eggs, beaten
3 tablespoons Regular or soy milk
2/3 cup Shredded Jack cheese

Preparation

Preheat oven to 400 degrees. In a large nonstick skillet over medium-high heat, combine ground turkey, onion, garlic, and green pepper. Cook until turkey is evenly brown and onion is translucent. Remove from heat, stir in tomato and basil. Drain the turkey mixture. Evenly distribute the turkey mixture between the muffin cups. Mix together the eggs and milk. Pour egg/milk mixture into the cups. Sprinkle tops with shredded cheese. Bake in preheated oven for 18-20 minutes or until filling sets.
