Ingredients
1/2 cup Canned black beans (rinsed and drained)
1/4 cup Salsa
1/4 cup Plain fat-free yogurt (can use greek yogurt)
1/4 to 1/2 teaspoon Ground cumin
1/4 cup Chopped, fresh cilantro
1/8 teaspoon Salt
3/4 tsp Nonfat sour cream
3 - 4 Inch corn tortillas
Preparation
In a food processor, combine black beans, salsa, yogurt, cumin, cilantro and salt; roughly chop mixture. Divide bean mixture among three 4-inch corn tortillas, and top each with 1/4 teaspoon of nonfat sour cream.
Cook's Notes
I like to heat up the tortillas in the broiler first to make them a little crunchy. You could even do it after you ad the bean mixture too.
