Ingredients

1 Medium onion, chopped
4 cloves Garlic, minced
4 Chipotle chile peppers, canned in adobo sauce, finely chopped
6 tbsp Cider vinegar
4 tbsp Orange juice
1 tbsp Sugar
4 teaspoons Canola oil
2 teaspoons Chopped fresh oregano
3 lbs Pork tenderloin
1 teaspoon Ground cumin
1 teaspoon Salt
1/2 teaspoon Freshly ground black pepper

Preparation

Coat a skillet with cooking spray and cook onion and garlic over medium-high heat for 5-7 minutes. Puree in a blender the chile peppers, vinegar, orange juice, sugar, oil, and oregano. Place pork in shallow dish and cover with paste. Cover and chill overnight.

Preheat grill to medium-high heat for indirect heat. (On gas grill, heat one side to high and the other to medium.)

In a small bowl, combine the cumin, salt, and black pepper. Remove the pork from the marinade and blot dry with paper towel. Rub with the cumin mixture. Grill the pork for 10 minutes. Move to the cooler section of the grill. Cover and grill for 10 minutes more, or until a thermometer inserted in the center reaches 155F. Let stand for 10 minutes before slicing. Divide the slices evenly amoung 4 plates and top with avocado.
