Make Ahead Lunch Wraps

This recipe makes a lot, and the wraps freeze beautifully. It's not often you get a recipe that's quick, inexpensive and healthy!

Ingredients

2 cups Cooked, shredded chicken or beef
2 cups Cooked brown rice
1 can Black beans
1 can Pinto beans
1 10 oz Can shoepeg corn
1 10 oz Can Rotel tomatoes (use less if you don't like spicy!)
16 Whole grain flour tortillas
2 cups Shredded sharp cheese
1/2 cup Sliced black olives (optional)

Preparation

Place beans into colander and rinse. Add corn and Rotel to colander and toss to mix. Transfer to large bowl; mix in rice, chicken, cheese and olives if desired.

Taking about 2/3 cup of the mixture, put into center of tortilla and roll up, burrito style. Wrap individually in Glad plastic wrap, place into large plastic Ziplock freezer bag and freeze. To reheat, remove from plastic, wrap burrito in moist paper towel and microwave about 90 seconds; or wrap in foil and warm in oven.

To serve, top with salsa and Bek's fresh guacamole. Add some shredded romaine and you have a meal.
