Beef and Broccoli Stir-Fry
Ingredients
2 tbsp Peanut or vegetable oil
2 tbsp Peeled and minced fresh ginger
2 Garlic cloves, minced
1/4 teaspoon Crushed red-pepper flakes
Zest of 1 orange
1/2 lb Boneless sirloin steak, thinly sliced
2 cups Fresh broccoli florets
1 Red bell pepper, cored, seeded, and chopped
2 tbsp Reduced-sodium soy sauce
2 tbsp Rice wine vinegar or white wine vinegar
1 tsp Cornstarch whisked with 1 tbsp water
1 Zucchini
1 Carrot
1 cup Grape tomatoes
Preparation
Heat the oil in a large nonstick wok set over medium-high heat. Add the ginger, scallions, and garlic. Cook, tossing and stirring until fragrant, about 30 seconds. Add red-pepper flakes and orange zest and cook 20 seconds longer.
Slip the sirloin strips into the pan and cook, stirring and tossing, until lightly browned, about 2 minutes. Add the broccoli and bell pepper, zucchini, carrot slices, and continue cooking until slightly softened but still crunchy, about 1 minute.
Pout in the soy sauce and vinegar and grape tomatoes and bring to a boil, stirring constantly. Add cornstarch mixture and cook for 15 seconds to thicken. Immediately remove from heat. Let stand for 1 minute before serving.
