Ingredients
1-1/2 lbs. Chicken breasts, skinless
3 tbl Soy sauce
2 tsp Corn starch
1 tsp Ginger
1 tsp Sugar
1 c Almond halves
1/2 tsp Salt
1/2 tsp Red pepper
Onion
2 tbl Oil
Green pepper
Preparation
Cut chicken into 1" pieces and set aside. In small bowl, blend soy sauce into corn starch. Stir in ginger, sugar, salt and red pepper. Add water to dilute. Set aside. Preheat skillet over high heat. Add cooking oil. Stir fry green peppers and onions for 2 minutes. Remove from skillet. Add almonds to skillet and stir fry for 1-2 minutes or until golden. Remove from skillet. Add more oil if necessary. Add chicken to skillet. Stir fry 2 minutes. Stir soy mixture and stir into chicken. Cook and stir until thickened and bubbly. Stir in veggies. Cover and cook 1 minute more. Serve over hot rice.
