Asian Salmon in Foil Packet

Simple one pot (packet) salmon dish.

Ingredients

10-12 oz. Salmon or other firm fish fillets (rinsed and cut in half if one large fillet)
1 cup Cooked rice
2 cups Bok choy or other greens (coarsely chopped)
1/2 can Water chestnuts (drained)
4 oz Mushrooms (sliced) - optional
2 Scallions (chopped)
1 tbl Vegetable oil
1 tsp Ginger root, fresh (grated)
1 Garlic clove (minced or pressed)
2 tbl Soy sauce
2 tsp Sesame oil

Preparation

1. Preheat the oven to 450 degrees

2. Prepare two sheets of foil about 12" X 12" (or larger depending on how much stuff you end up using) - Brush a little oil in the center of each sheet.

3. In small bowl create the sauce by combining vegetable oil, ginger, garlic, soy sauce and sesame oil.

4. Layer the ingredients on the center of each foil sheet in the following order (half on each sheet of foil): rice, greens, water chestnuts, mushrooms, fish, scallions, sauce.

5. Fold the foil into airtight packets and place directly on oven rack or put them on a baking sheet to catch any liquid that might escape.

6. Bake for 20 minutes, or until fish is cooked.

7. Transfer contents of each packet to individual plates or bowls.

Cook's Notes

(1) My foil sheet is never large enough, and I have to start over, but then I usually increase the amounts. (2) Be careful of steam escaping from packet when opening. (3) This is also quite good when you dump both packets into one large serving bowl and kind of mix it up, shredding the fish into bite size pieces. (4) If the fillet has skin, I have found it easier to leave it on, since it just peels right off after cooking.
