Cranberry Bread

Ingredients

1 1/4 cup All-purpose flour

1 cup Sugar

3/4 cup Whole wheat flour

1 1/2 tsp Baking powder

1 tsp Salt

1/2 tsp Baking soda

1 tsp Orange zest

2/3 cup Orange juice

3 tbsp Light stick butter, melted

1/4 cup Fat-free egg sustitute

1 cup Fresh cranberries, coarsely chopped

1/2 cup Dried cranberries

1/2 cup Golden rasins

Preparation

Preheat the oven to 350 degrees. Spray a 5x9-inch loaf pan with nonstick spray. Mix flours, sugar, baking powder salt and baking soda in a bowl. Mix orange zest, orange juice, butter and egg substitute in another bowl. Add the orange mixture to the flour mixture; stir just until blended. Add cranberries and rasins; stir just to mix.

Scrape the batter into the pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour. Let cool in the pan 10 minutes. Unmold the bread; let cool on rack.
