A healthy, delicious alternative to boring nightly casseroles.

Ingredients

2 Chicken breasts

2 cubes Chicken bullion

1 tsp Garlic salt

Dash pepper

1 t Corn starch

1/4 c Cold water

1 c Tomato, diced

1 c Pineapple

1 c Frozen peas, thawed w/ cold water

1 c Diced green bell pepper

1/2 c Sliced almonds

1/2 c Shredded coconut

Crunchy Chinese noodles

Cooked rice

Preparation

Chicken gravy:

In a large saucepan, combine whole chicken breasts, 4-5 c water (depending on desired amount of gravy), chicken bullion, garlic salt, and pepper. Bring to a boil, cover and cook for 1 hour.

When chicken is completely cooked through, remove from saucepan and dice into 1 in. cubes. Return to pan, and add corn starch dissolved in cold water. Cook until gravy thickens, add more corn starch dissolved in cold water as necessary.

Serve gravy and all other ingredients in separate bowls and allow each person to assemble his or her own stack.
