Ingredients

4 Yellow squashes, chopped
1 Onion, medium, chopped
2 Anaheim peppers, roasted & chopped OR (1 can chopped green chilies)
2 tbsp Flour
2 tbsp Butter
1 tsp Salt
1 Egg, beaten
1 c Cottage cheese
1 1/2 c Monterey Jack Cheese, grated
1/2 c Parmesan Cheese
Pepper to taste

Preparation

Preheat oven to 400 degrees. Saute' squash, onion and butter in a skillet until crisp tender. Add chilies, flour, salt and pepper: stir. Pour into a baking dish. In a mixing bowl, combine egg and cottage cheese. Mix well and pour over squash mixture. Sprinkle Monterey Jack and parmesan cheese over top. Bake for 30 minutes.
