Chicken Curry with Cocunut Milk

Easy chicken curry

Ingredients

500g Chicken breast cubes

1 Onion

1 Small tin sliced mushrooms

1/2 Tin coconut milk

1/2 Red pepper

1 tablespoon Sunflower oil

1 Packet curry sauce powder.

250ml Cold water

Preparation

Dice onion and red pepper. Saute in oil until tender. Add Chicken breast cubes and cook chcken thoroughly (use some chicken spice if you like).

Add mushrooms.

Add water and packet sauce.

Bring to boil.

Add coconut milk and simmer for 20 minutes.

Serve with sliced banana and jasmine rice

Cook's Notes

The easy bit is using the convenience curry sauce packet.
