GRANNY'S VEGETABLE SOUP

A DELICIOUS COMFORT SOUP!

Ingredients

1 pound GROUND BEEF

1 LARGE ONION, CHOPPED

1 can DICED TOMATOES

1 can (8OZ) TOMATO JUICE

1 can WATER OR BEEF BROTH

1/2 c. CHOPPED CELERY

3 CARROTS, SLICED

2 bunches CELERY LEAVES, REMOVE BEFORE SERVING

3 MEDIUM POTATOES, PEELED AND CUBED

1 t. SALT

1 t. PEPPER

1/4 t. EACH: MARJORAM, THYME, AND CRUSHED BAY LEAVES

2 tablespoons SOY SAUCE

1 c. EACH FROZEN GREEN PEAS AND CORN

Preparation

BROWN MEAT, RINSE AND DRAIN. ADD ONIONS AND COOK UNTIL TENDER. ADD TOMATOES, JUICE AND WATER. ADD CELERY, CARROTS, CELERY TOPS, TOMATOES AND SEASONINGS. BRING TO A BOIL, THEN SIMMER 30 MINUTES. ADD POTATOES, PEAS AND CORN. SIMMER 30 MINUTES LONGER. THICKEN BROTH WITH CORNSTARCH AND WATER. REMOVE CELERY TOPS AND SERVE.
