Healthy breakfast
1 med egg
1 cup Egg whites
1/2 White onion
1 1/2 cups Brocooli florets
1 tsp Butter
1/2 cup Low fat shredded mozza cheese
2 slices Whole grain bread toasted
1/4 tsp Salt
1/4 tsp Pepper
Crack egg into a medium sized mixing bowl. Add egg whites mix throughly. Peel and dice onion. Remove stems from broccoli and cut florets into small pieces. Melt butter in a non stick pan on med -high heat. Add diced onion and broccoli. Contineue stirring until broccoli befins to become tender but is still a bit crunchy. Pour egg mixture on top of onions and broccoli. Mix constantly. When the egg mixture is half coooked add salt, pepper and cheese. Continue to cook until the egg mixture is fully cooked. Garnish with tomato slices and enjoy on slice of toasted whole grain bread.
