Black-eyed pea salad

This is a winner in my family. And very simple to make

Ingredients

1 can Black-eyed peas, rinsed and drained

1 tbsp Finely chopped onion

1 tbsp Canola Oil

1 tbsp Cider vinegar

1 tbsp Red fat mayonnaise

ΒΌ tsp Salt

Dash Cayenne Pepper

1 Medium tomato, seeded and diced

Preparation

In a bowl combine peas, and onion. In another bowl whisk the oil, vinegar, mayonnaise, salt and cayenne. Stir in vegetable mixture. Refrigerate until serving. Stir in tomato just before serving.
