Sage ia an excellent accompaniment to any pork dish. Here it transforms basic pork chops into an earthy Mediterranean meal.

Ingredients
2 Boneless pork sirloin chops, cut 3/4 inch thick
Kosher Salt
Freshly ground black pepper
4 cloves Garlic, minced
1 tablespoon Soy sauce
1 tablespoon Fresh sage, chopped
1 tablespoons Extra-virgin olive oil
2 teaspoons Lemon juice
1 1/2 teaspoon Fresh flat-leaf parsley
Preparation
1. Preheat oven to 350 F. Trim fat form meat. Season with kosher salt and pepper; set aside. For basting sauce, in a small bowl combine garlic, soy sauce, 1 1/2 teaspoon sage, 1 1/2 teaspoon olive oil, and 1 teaspoon lemon juice.
2. Coat the chops with the basting sauce. Bake chops in oven for 15 to 20 minutes or until done and juices run clear, turning and basting with natural sauces half way through baking.
3. Meanwhile, in a small bowl combine 1 1/2 teaspoon sage, the parsley, 1 teaspoon lemon juice, and 1 1/2 teaspoons olive oil. When the pork chops are done take the remaining basting sauce in the pan and add it to the second sauce.
4. To serve, cut meat into 1/4-inch-thick slices. Top with the new sauce mixture.
Cook's Notes
For Wave 1, serve with Mushroom with Garlic and Herbs, and whole grain roll. For Wave 2 and 3, serve with Sweet Potato and Cranberry bake, fresh pear slices, and a whole grain roll.
