Flax Seed Muffins
mix-1 1/4 cup Brown Rice Flour
3 cups Ground flax seed
1 tsp. Baking soda and baking powder
1/2 cup Maple syrup or agave
3/4 cup Milk (soy or rice)
2 tbsp. Oil
2 Eggs or egg substitute=2eggs
Pour into muffin holders. Bake at 350 degrees for 18 minutes- can be frozen.
You can also add a 1/2 cup of any dried fruit, blueberries, shredded carrots, coconut, etc....
