Chicken Pad Thai

This is a very simple chicken Pad Thai recipe. I've taken ideas from a few different recipes so I do not actually deserve the credit.

Ingredients

3 Boneless, skinless chicken breasts.
2 packages Udon or Egg noodles
1 cup Sweet Thai chili sauce. I use (Thai Kitchen) brand; alternatively, you could use plum sauce and add chili flakes and a little bit of paprika - if you're looking for the 'heat'
Cilantro chopped: as much as you desire. I love it, but hold back a bit because it can be overpowering. Use the fresh stuff (not coriander seed)
1/4 cup Peanuts chopped or crushed
1/4 tsp Lime juice or juice from one whole lime

Preparation

1. Cut up chicken or other meat choice into peices and quickly saute in frying pan with a tbsp of olive oil, just until cooked through.

2. Drain excess liquid from pan, and put back on low heat, adding half of the sweet thai chili sauce.

3. Put pre-cooked udon noodles into a bowl and fill with hot water from tap, just to separate noodles so they don't stick together. Follow instructions on the package.

4. Add udon noodles (not the water!!!) to the frying pan with 1/4 cup lime juice or the juice from a whole lime, and mix with meat and sauce until the noodles are covered.

5. Add the rest of the sweet thai chili sauce (i put a whole cup in at this point because I love it), half the peanuts and the cilantro and turn up the heat to quickly cook the sauce so it thickens a slight bit and becomes almost sticky.

6. Put into low bowls or rice bowls. Garnish with some peanuts, a sprig of cilantro and a slice of lime.

Cook's Notes

This dish can also be done with kobe beef or a very lean cut of beef. You can also add tofu, shrimp or tuna, although they should be cooked separately to reduce any contamination.
