An easy crockpot meal great for cool fall or winter evenings.

Ingredients

2 packages SmartGround protein crumbles (ground beef substitute)
1 Large onion, diced
1 tablespoon Olive oil
2 cans Diced tomatoes (14.5 oz each) - can use diced tomatoes with italian herbs as alternative
1 can (8 ounces) tomato paste
1 16 ounce Can kidney beans (drained)
1 16 ounce Can pinto beans (drained)
1 16 ounce Can black beans (drained)
4 ounce Can of diced green chiles
1 cup Water
2 Garlic cloves, minced
2 tablespoons Mild chili powder
2 teaspoons Salt
2 teaspoons Ground cumin
1 teaspoon Pepper

Preparation

Dice onion and and sweat in a skillet with some olive oil until soft (5 minutes) - can be done the night before to save time.

Place all ingredients into a slow cooker, stir and cover with lid.

Faster Cooking Method: After adding all ingredients, cook on HIGH for 30 minutes. Then change to low and cook for 4-6 hours.

Slow cooking method: Cook on low for 8-10 hours.
