Ingredients

2 tbsp. Canola oil
2 Garlic cloves, minced
1 Medium onion, chopped
4 cups Chopped kale
1 tbsp. Butter
1 tbsp. Flour
1/2 cup Milk or soy beverage
1/2 cup Cheddar cheese
6 Corn tortillas
1/2 cup Salsa

Preparation

Preheat oven to 375F.

Heat oil; saut? garlic and onion until golden. Add kale slowly until it is cooked. In saucepan, melt butter, stir in flour, add milk and cheese. Stir until thick. Then mix into cooked greens.

Fill center of each tortilla, roll up, and place in lightly oiled baking dish. Spread salsa over all; bake for 25 minutes.
