Black Bean and Corn Salsa

So yummy, fresh and healthy!

Ingredients

1 15 oz. Can black beans, rinsed and drained

1 11oz. Can whole kernel corn, drained

1 tsp. Minced fresh jalapeno (optional)

1 Avocado, chopped

1 Large slicing tomato, chopped

1 Red bell pepper, chopped

1/2 c. Diced red or white onion

1/3 c. Fresh cilantro, chopped (or sub. 1 t. dried)

1/4 c. Lime juice

1 tsp. Salt or sea salt

Tortilla chips for dipping

Preparation

Combine all ingredients and chill before serving.

Cook's Notes

Great to top on fish, with tacos or great with tortilla chips! Note: Avocado can get soft. If not eating immediately: add all ingredients, chill, and then top with avocado.
