Baked Omelet

Easy breakfast omelet.

Ingredients

4 Eggs
1/8 cup Milk
4 oz Sharp cheddar cheese, shredded
1/4 lb Breakfast sausage, cooked
1/8 cup Green onion, diced
1/2 Bell pepper, diced
Salt and pepper to taste

Preparation

Preheat oven to 425.

Prepare a small baking dish with oil or nonstick spray.

Add eggs and milk to a bowl and beat until well blended.

Add remaining ingredients and mix. Reserve 1 oz of shredded cheese for the top.

Pour into greased baking dish. Sprinkle with remaining cheese.

Bake for 25 minutes. Let cool for 5 minutes before serving.

Cook's Notes

Mix it up by subtituting other breakfast meats, vegetables and cheeses to suit your taste. Double this recipe and use an 8x8 baking dish. If you wish to quadruple the recipe, use two 8x8 baking dishes. I do not recommend using a 9x13 pan as the center will take too long to bake.
