Ingredients
1 16-oz Can whole tomatoes, mashed
1 16-oz Can Mexican style beans
1½ cups Uncooked long grain converted rice
1 Onion, chopped
1 cup Cottage cheese
1 4-oz Can green chili peppers
2 tablespoons Vegetable oil
3 teaspoons Minced garlic
2 cups Grated Monterey Jack cheese, divided
Preparation
1. Mix all ingredients except for 1 cup of grated cheese in the slow cooker.
2. Cover; cook on Low 6-9 hours.
3. Sprinkle with remaining cheese before serving.
