Ingredients

1 c Dried apricots & chopped
1 1/4 c Sugar
2 tbs Shortening
1 well beaten egg
1/2 c Orange juice
2 c Sifted flour
2 tsp Baking powder
1/2 t Salt
1 c Chopped pecans

Preparation

Soak apricots 20 minutes in hot water. Cream together sugar, shortening, and egg. Blend in the orange juice. Add dry ingredients and mix well. Drain apricots and add to batter with nuts.. Pour into a prepared loaf pan.

Bake 350 degrees for 65 minutes.
