1 3/4 c Flour
2/3 c Sugar
2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
2 cups Mashed bananas
1/3 c Shortening
2 tablespoon Milk
2 Eggs
1/4 c Walnuts chopped
Preparation
In a large bowl, combine 1 cup of flour, sugar, baking powder, baking soda, and salt. Add bananas, shortening and milk. Add eggs and remaining flour. Beat until blended. Stir in nuts. Cook 350 degrees for 35-40 minutes. Pour batter into greased pans and bake until toothpick comes out clean. Cool 10 minutes, remove from pan and cool thoroughly. Store in an air-tight container.
Double recipe for 5 mini loafs.
