Ingredients

1 Medium onion
1 Pork tenderloin (about 1 lb)
1 tbs Vegetable oil
2 tbsp Smoky Barbecue Rub
8 Small rolls
Smoky Barbecue Sauce

Preparation

Cut onion into 1/4 in slices. Arrange over bottom of baker. Trim fat and sliver skin from pork tenderloin. Brush with oil. Place into baker, tucking narrower end under to create a uniform thickness. Evenly rub pork with barbecue rub.

Cover baker; microwave on high 6-10 minutes or until temp. registers 150, checking temp at 6 minutes and then at every 2-minute intervals. Remove baker from microwave; let stand, covered, 10 minutes (temp will rise to 160 for medium doneness).

Cut pork into 1/4-in slices. Arrange sliced pork evenly over rolls; top with onions. Spread about 1 tsp Smoky Barbecue Sauce over top of each roll; top sandwiches and serve.

Cook's Notes

BBQ SAUCE 1 cup Ketchup 2 Tbs Apple Cider Vinegar 1/4 cup of Light Brown Sugar 2 Tbs Smoky BBQ RUB Add vinegar to Small Micro Cooker, ketchup, sugar, and rub. Stir. Microwave 2 minutes. Stir and serve. Reserve remaining sauce for another use. (YIELD 1 1/2 cups sauce)
