Breakfast Burritos

This is for a double batch of breakfast burrito filling. Freeze half for next Saturday morning. Please note, the ingredients are listed in larger quantities so it will come up on the shopping list better.

Ingredients

1 pkg Whole wheat tortillas
1 pkg Breakfast sausage
6 Eggs
1pkg Shredded cheese
1 jar Salsa
2 Carrots
1 Red bell pepper
1 Green bell pepper
1 Onion
1 Potato or frozen hash browns

Preparation

1. Chop 1/2 the onion, the peppers and the potato if you didn't get hash browns. Wash, peel and shred the carrots.

2. Crumble and cook the sausage. When sausage is mostly cooked, add the vegetables. While that is cooking --

3. Scramble and cook the eggs in a separate pan, two at a time. Cut up a bit and set aside.

4. When sausage and veggies are cooked thoroughly, mix with scrambled eggs in a bowl.

5. Add cheese, fill tortillas and fold up, Set burritos in a hot pan for a minute or two to melt the cheese. Serve with salsa.

Cook's Notes

Make Ahead Ideas: *Cook a full batch of the filling and freeze half for another day. *Make burritos ahead of time and wrap individually in tin foil or plastic wrap for quick weekday breakfasts. *Use the second half of the filling for a lunch or dinner casserole - just make up a box of instant stuffing mix and stir in the remaining filling - et viola! Casserole!
