Preparation
Heat oil on med-high in large skillet. Add red pepper and garlic, cook 4 min-stirring occasionally
Mix in canned beans. Add spinach, veg broth and water. Bring to a boil, cook uncovered for 3-4 min or until most of liquid has evaporated.
Put in bowls and top each portion with cheese and pepper to taste.
Great with corn bread or french bread and serve!
