Ingredients
1 tbsp Olive Oil
1 Red Bell Pepper
3 cloves Garlic, minced
2 15 oz. Can Great Northern Beans-rinsed & drained
1 pkg (10oz) frozen chopped spinach, thawed & drained OR fresh spinach
1/2 to 1 c Vegetable broth (may use bouillon cube)
1/2 c Water
Parmeson Cheese as desired
Black pepper to taste
Preparation
Heat oil on med-high in large skillet. Add red pepper and garlic, cook 4 min-stirring occasionally
Mix in canned beans. Add spinach, veg broth and water. Bring to a boil, cook uncovered for 3-4 min or until most of liquid has evaporated.
Put in bowls and top each portion with cheese and pepper to taste.
Great with corn bread or french bread and serve!
