Apple Bran Muffin

Ingredients

3/4 cup All-Bran or Bran Buds cereal
1 cup Skim milk
2/3 cup Whole wheat flour
1/3 cup Splenda
2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
1 1/4 cups Oat bran
2/3 cup Raisins
1 Large apple, peeled and cut into 1/4-inch cubes
1 Egg, slightly beaten
2 tsp Canola oil
1/2 cup Unsweetened applesauce

Preparation

  1. Preheat oven to 350 F. Lin a 12 cup muffin tins with paper or foil liners
  2. In a bowl, stir together flour, Splenda, baking powder, baking soda and salt. Stir in oat bran, raisins and apple.
  3. In small bowl combine egg, oil and apple sauce. Stir, along with cereal mixture into dry ingredients.
  4. Divide batter among muffin cups. Bake until lightly browned, about 20 minutes.
