Back Bacon Omellette

The smoky flavour of bacon makes this omelette a hit. Serve this with fresh fruit and yogurt for a hearty breakfast.

Ingredients

1 tsp Canola oil
1/2 cup Liquid egg
1 tbsp Chopped fresh basil
1 tbsp Grated Parmesan cheese
Pinch freshly ground pepper
2 slices Back bacon or ham, chopped
1/4 Red or green pepper, chopped

Preparation

  1. In small non-stick frying pan, heat oil over medium high heat.
  2. in bowl, using a fork, stir together liquid egg, basil, cheese and pepper.
  3. Pour into frying pan and cook for about 5 minutes, lifting the edges to allow uncooked egg to run underneath, until almost set
  4. Sprinkle bacon or ham, and red or green pepper over half of the omelette
  5. Using a spatula, fold over the other half and cook for 1 minute

Makes 1 serving
