Canning Prep; Use pint-sized mason jars. Put jars in dishwasher for a short wash then leave them in for heated drying (the jars must be hot and sterile as possible) OR boil them in a large pot on stove for at least five minutes. Reduce heat to low and let the jars sit in the hot water until you use them.
Ready to Fill: Using a large metal funnel place atop each jar, fill to within 1/2 inch of the top or just to the point where the neck starts. With a clean paper towel, wipe away any dribbles that may cause the contents to spoil. Quickly place the hot lid on top, rubber side down, and then screw it in place with the ring.
Heat: Put all jars in a very large soup kettle or canner filled with watter. The water must cover the jars by at least one inch. Bring the whole thing to a boil and continue to boil for 5 to 10 minutes.
Done: Carefully remove the jars from the water. Place them on a wire rack to cool. You may hear popping. This is the jars sealing themselves. Leave them alone for a long time. If any jars have not sealed properly, use them first and put the rest in a cool, dark place.

36 cups Unsweetened applesauce, divided; 22 cups for 1st round of slow cooking and another 14 cups for second round
2 tbsp Ground fresh cinnamon
1 tsp Ground cloves
1/2 tsp Ground allspice
1 tsp Fresh lemon juice
Pinch nutmeg
3 cups Sucanat or amber agave nectar, divided: 2 cups for the first round of cooking and 1 cup for the second round of cooking
Preparation
Place all ingrediants in slow cooker. Sitr until blended. Set your slow cooker on a large cookie sheet or cover the cooking area with tin foil or kitchen towels. Once the mixture heats up, it will boil and splatter a bit. Set on medium low. Set the cover so steam can escape.
Depending on your slow cooker, you may hvae to cook your apple butter as many as 12 hours. The goal will be to have a thick, darkly colored butter of spreading consistency.
After the first round of cooking, add the rest of the applesauce. Add 1 more cup of agave nectar or Sucanat and cook for another 3 hours. Apple butter is meant to be smooth. Sometimes the butter you have stewing in your slow cooker needs to be pureed to a finer consistency. Use a hand-held blender for this.
