Spice Mini-Burgers with Couscous Salad

Ingredients

1 10-ounce Box couscous

1 pound Ground beef

Salt and pepper

1 1/2 teaspoons Ground cumin

1 1/2 tablespoons Dried oregano

4 tablespoons Olive oil

6 Scallions, trimmed and sliced

4 Roma tomatoes

1 Seedless cucumber, sliced into half moons

3 tablespoons Fresh lemon juice

Preparation

Make couscous according to directions on box

Mix ground beef with spices and divide into 12 small patties.

Heat 1 tablespoon of oil in a pan over medium heat and cook patties to desired doneness, about 4 minutes a side.

Combine remaining ingredients with the couscous along with 1 1/4 teaspoon salt and 1/4 teaspoon pepper and remaining oil.

Serve with hummus, pita, and a fatoosh salad.
