Ingredients

2 16 oz Cans black beans, including liquid
2 tsp Chili powder
1/2 tsp Ground cumin
1 clove Garlic, minced
1 Bay leaf
12 6in flour tortillas
6 Green onions
2 Tomatoes chopped
1 cup Grated cheddar
Salsa and/or sour cream

Preparation

Combine beans, liquid,chili powder, cumin, garlic and bay leaf in medium saucepan. Simmer for 5 minutes. Remove bay leaf. Drain beans and reserve liquid. Mash beans, adding liquid as needed. Preheat oven to 400 degrees. Place 1-2 TBS bean mixture in center of tortilla. Spread out with spoon. Top with onion, tomatoe and cheese. Roll into tube shape. Place seam side down in 9 X 13 inch pan. Bake for 15 inutes. Serve with sour cream and salsa if desired.
