Ingredients

1 tbsp Olive oil
1 Sm onion, chopped
1 clove Garlic, passed through a garlic press
1 tsp Fresh jalapeno pepper
1 can Black beans, drained and rinsed
2 Plum tomatoes, chopped
1 c Salsa
2 tbsp Fresh cilantro
Dash Worcestershire sauce
5 Egg whites
1 whole egg

Preparation

1. In a saucepan, heat oil over md heat; cook onion, garlic and jalapeno for 3 to 5 minutes until softened.

2. Stir in beans, tomatoes and salsa. Cook for several minutes or until thickened. Stir in cilantro and Worcestershire sauce.

3. Meanwhile, whip egg whites and whole egg together in bowl. Spray large skillet and heat over md. Pour eggs into hot skillet and cook til just done.

4. Spoon salsa onto heated plates. Settle eggs on top of the salsa.
