Ingredients

24 Cherry tomatoes
1 Small ripe avocado
1 tbsp Fresh lime juice
1 tsp Coarse salt
2 oz Pepper jack or tomato-olive jack cheese, diced into 24 cubes

Preparation

1) With a serrated knife, cut 1/4 to 1/2 inch off the top of each tomato. With a melon baller, scoop out the seeds, leaving the shell intact.

2) In a small bowl, mash together avocado, lime juice, and salt until blended. Spoon about 1/2 tsp avocado mixture into each tomato. Top with a piece of cheese. Skewer each tomato to make a lollipop.

Makes 24 lollipops. Each lollipop: 26 cal, 2g fat, 1g protein, 2g carb.
