Ingredients

3 t. Rice vinegar
1 t. Minced, peeled fresh ginger
1 t. Low sodium soy sauce
1 tsp. Sugar
1/2 tsp. Salt
4 c. Shredded iceberg lettuce
3 c. Shredded roasted boneless, skinless chicken breast
1-1/2 c. Fresh bean sprouts
1/2 c. Chopped green onions
2 t. Dry roasted cahsews, chopped
1 ( 11 oz) can Mandarin oranges in juice ( drained)

Preparation

Combine first 5 ingredients, stirring well with a whisk.

Combine lettuce and remaining ingredients in a large bowl. Drizzle with dressing right before serving. Toss to coat.
