Ingredients

1 Egg
2 tbs Salad oil or melted butter
1 cup Buttermilk
1 cup Flour
1 tbs Sugar
1 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1 tsp Vanilla

Preparation

Combine dry ingredients.

Beat egg, then add vanilla, and buttermilk.

Mix wet ingredients with dry ingredients.

Cook's Notes

To test griddle: Sprinkle with a few drops of water. Heat is just right when bubbles skitter around. To make buttermilk: Add 1 Tbs of white distilled vinegar, cider vingar, or lemon juice to one cup of milk. Let stand at room temperature for about 10- 15 min. before using.
